LOVE Scrapbook album


A while back I bought a couple of 'love' mini albums. I think they would make a lovely gift for anybody getting engaged, married or just to organise those important photos to cherish for years to come.




Had lots of fun decorating it with my new Papermania papers from the Madame Payraud's range that gives the whole album that vintage and romantic look. I have also played around with coordinating ribbons, lace, flowers and other embellishments.

Balsamic Vinegar Chicken

This is an old favourite family recipe that I decided to make Slimming world friendly.  Still love it and it can be adapted to most meats.  Also a good idea to use it to marinate chicken or steak for a summer BBQ.  So tasty!


INGREDIENTS: (syn free on Extra Easy)
Serves 4

chicken legs or thighs (appox. 700/800 gr) with no skin
5 tbsp balsamic vinegar  
1 tsp dried mint
1 tsp dried oregano
1 tsp dried rosemary
salt and pepper to taste



METHOD:


  1. Mix the vinegar and herbs in a bowl. Coat the chicken in it and marinate in the fridge for a few hours.  I usually get it ready in the morning and cook it in the evening.
  2. After a few hours place it in an oven-proof dish and cook in the oven at 180 degrees for about an hour or until the chicken is fully cooked.
  3. Serve with Slimming World chips and a crispy salad.

Magic Pancakes

This is gotta be the most filling Slimming World breakfast!  I absolutely love it and feel like I am having a real treat. Perfect for a weekend breakfast: what a way to start the day!!

INGREDIENTS: (syn free if using oats as a HEB)
Serves 1

35 gr oats (HEB)
1 muller light yoghurt (I usually use the vanilla flavour)
2 eggs
A few drops of vanilla essence
Sweetener to taste (I prefer them without it but I don't have a sweet tooth)
Fresh fruit 


METHOD:

  1. Soak the oats in muller light yoghurt overnight.
  2. In the morning add the 2 eggs and blend everything together.
  3. Spray a pan with frylight and spoon the batter as you would for regular pancakes.  The only thing is that you have to make sure that one side is done before flipping it or it will break.
  4. Serve with a chopped banana and fresh strawberry and enjoy! 




Yummy!



I can guarantee it will fill you up for hours :-)

Altered box

This is my first attempt at altering a box. I used papers from the Papermania Botanical range, adhesive lace, flowers and charms I purchased on Ebay a while back.







Have to say I really enjoyed this project and I am planning to make a few more.  I think I will try with different styles as well.

Sticky Chicken and Egg Fried Rice

Definitely recommend to try out these recipes! The chicken is so sweet and tender and the egg fried rice is always a big hit with my family and it's also so easy to prepare.

STICKY CHICKEN (2 syns on Extra Easy)

Ingredients:
serves 4

700gr chicken breasts
3 tbsp honey (2 1/2 syns each tbsp)
3 tbsp balsamic vinegar
3 tbsp soy sauce






Method:


  1. Marinate the chicken in the honey, balsamic vinegar and soy sauce for at least an hour. Make sure that all the chicken is coated. I usually prepare it in the morning and put it in the fridge till it's time to cook it.
  2. Heat a frying pan and coat it with Frylight.  Cook the chicken for about 20 mins or until the marinade has been absorbed.
  3. Enjoy it!

I served it with Egg Fried Rice and mixed salad





Egg fried rice is also a fairly quick recipe and makes a nice change from chips. I use jasmine rice that I find cooks faster and absorbs much better all the flavours.

EGG FRIED RICE (syn free on Extra Easy)
serves 4 

Ingredients:

250 gr rice
1 large onion
100 gr peas
100 gr sweetcorn
1 splash of Worcestershire sauce
4 tbsp soy sauce
2 eggs

Method:

  1. Cook the rice, and cool it down under cold water. Set aside.
  2. Dice the onion and fry it in a pan coated with Frylight. Add peas and sweetcorn.
  3. When the vegetable are cooked add the rice, the soy sauce, the Worcestershire sauce and the eggs that have been previously beaten.
  4. Keep stirring till the eggs are fully cooked and serve. Soo yummy!

Simple breakfast

I have been following the Slimming World plan since September 2013.  I am now a target member and loving it.  This is a very simple and quick breakfast and also one of my favourites! Very handy if you have to rush out the door like me in the morning for the school run.


A chopped banana and strawberries, 1 Alpen light bar (half HeB), a Muller light yoghurt and a cuppa

Hanging decoration - Love vintage

Here we go...my first post! EEEEKKK!!! So excited!

This is an altered item I worked on last week.  It's a small window that measures approx 5"x7".
First of all I painted it using some paint dabbers I picked up during my trip to America a while back.  After that I placed some paper from the Papermania Botanical collection at the back of the window pane and stamped a small butterfly in one of the panes. Then I tore some Papermania tissue paper and glued it on two corners. I also used 3 roses and gave the window a vintage look by dabbing it with gesso.
